A Restaurant That Will Make Everyone the Fan of Gopchang, by. Nathan Park

 

        "Grandma Gopchang" is a restaurant that serves giblet, which is also called gopchang, and it is located in Sapkyo, Yesan in Chungcheongnam-do. Gopchang is an organ of a cow or pig which sounds disgusting, but it is chewy and tastes like other parts of the meat, only has a stronger flavor. I once went to the "Grandma Gopchang" with my family and friends when I was on a vacation trip. We drove for two hours to arrive at this restaurant and I had a bellyache, so I was annoyed. The restaurant was in the countryside so it looked old, but it was much cleaner than I thought inside. We had to take off our shoes and sit on a cozy cushion around the table that had a large pan in the center. It was a bit dark, but the structure of the building was an old Korean-style restaurant, and it looked like adults should love this place due to its style. There were only a few servers, but they worked fast and well. The other people in the restaurant were cheerful and talked among themselves. The only thing I disliked was the noise, but it also might help people understand traditional K-style restaurants. We ordered the main menu which was grilled Gopchang, and it cost 10,000 won.

Just in a few minutes, the server served an enormous dish of Gopchang of pig, and she put it on the pan. We had to grill it by mixing gopchang, and it didn't take a lot of time. The server also instructed the time for the best cooking. It smelled of fire which is just perfect for meat. It was brown and shaped like sundae, with a sizzling noise that made my ear happy. However, it was even more flavorful. When I first ate it, I couldn't understand why adults liked it. It was chewy, but it was hard to swallow for small children like me at that time, and its texture was kind of like rubber. However, after having a few pieces, I started to realize that it doesn't taste too strong, but has flavor and texture that made my cells cheer. It tasted like eating super thick meat, but it wasn't hard to swallow and its rubber-like texture didn't ruin its flavor. I couldn't stop myself from moving my chopsticks even when I was full. We ended up ordering another pan of gopchang and gopchang jeongol, which was a bit more expensive, but it was worth it because it had other things than gopchang so everyone can enjoy it well, no matter what food they like. It had some gopchangs, vegetables, and more. I rate roasted gopchang and gopchang jeongol 5 out of 5 stars because it helped me experience eating ten dishes of food. I also rate the restaurant 5 out of 5 stars because the mood was energetic and it was comfortable to eat. I immensely recommend this restaurant, especially for someone who hasn't tasted gopchang before, or visitors from other countries who want to visit an old Korean restaurant.
